Fiesta Chicken and Pasta (p.98)
This recipe is amazingly versatile.
I use the recipe as it is written because it is fabulous in and of itself.
The sauce from this recipe can be used for fish tacos, egg dishes, burritos, quesadillas etc...
I mix up the dry rub spices from this recipe and keep them in a shaker bottle in my spice cupboard. Then I use them to replace dry taco mix in any recipe. You can create fabulous chicken tacos in an instant by slicing chicken breast thinly then stir-frying it with Fiesta Chicken and Pasta Spices. This also works with pork and beef. Sprinkle it in homemade Refried Beans (p. 119) to zip up the flavor. Mix it with sour cream to use in Seven Layer Dip (p.14). There is no end to what you can do with this fabulous combination of spices.
Taco Sauce (p. 218)
This is a favorite recipe for our family. We call it "Taco Bell" sauce. It's a lot like "Taco Bell" sauce but we like it better. I have a bottle of this in my refrigerator at all times. We use it in and on every Mexican Food recipe. For a delightful twist on seven layer dip (p.14), sprinkle it on the sour cream layer before all the cheese, tomato and other toppings .
Chicken Alfredo Pizza
This is a combination of my Pizza recipe (p.106) and my Fettuccini Alfredo recipe (p.120). Combine the sauce ingredients from Fettuccini Alfredo in a sauce pan. Heat over low until the sauce thickens. Cool. This sauce can then be spread on your pizza crust instead of marinara
